My week adds up to more than 168 hours. What now?

Some estimates are high, or two things happen at once, like a podcast on the commute. Count each hour once, under whatever you were mainly doing.

How accurate is a guess?

Good enough to start. People tend to overestimate their working hours, so if a number matters to you, log one real week in half-hour blocks and enter it again.
